What to pair with… Bodegas Fin del Mundo ‘Los Hermanos’ Pinot Noir

Welcome to the Vinamericas’ first food-pairing post!  We say ‘food pairing’ and not ‘wine pairing’ as we here at Vinamericas like to start out with which wine in our cellar we want to enjoy and then pick a dish that will allow it to shine! For this first post we have decided to pull out of our cellar a Pinot Noir from Bodegas Fin del Mundo.

 

The wine’s name, Los Hermanos, comes from the name of the single vineyard from which it hails. It originates from the remote, windswept vineyards of Patagonia in Argentina, specifically within the Neuquén appellation. The desert climate of Patagonia, characterized by warm sunny days, cold nights, and minimal rainfall, extends the grape ripening season, allowing the Pinot Noir to develop vibrant varietal character and balanced acidity. The stony, well-drained soils—nourished by meltwater from the Andes—further contribute to the wine’s nuanced profile, while advanced vineyard management and winemaking techniques enhance its quality and expression of the unique Patagonian terroir.

So what to enjoy with it?  Here are a couple of suggestions.

1. Grilled Salmon with Herb Butter

Why it pairs well: The richness of salmon is perfectly balanced by the wine's bright acidity, while the fresh herbs echo the subtle spices in the Pinot Noir

Basic Recipe:

  • Grill salmon fillets until just cooked through.

  • Mix softened butter with chopped dill, parsley, chives, and lemon zest.

  • Top the hot salmon with a generous spoonful of herb butter to melt over the fillet.

  • Serve with roasted or steamed asparagus.

Why it pairs well: Earthy mushrooms highlight the wine's subtle earth and mineral notes. The creamy risotto harmonizes with the silky structure and gentle tannins of Pinot Noir

Basic Recipe:

  • Sauté a mix of wild mushrooms with shallots and garlic in olive oil.

  • Add arborio rice and stir to coat.

  • Slowly add warm vegetable or chicken broth, stirring constantly until creamy.

  • Finish with Parmesan cheese and a handful of fresh herbs like thyme or parsley.
