APPELLATION: Sierra de Montilla-Moriles Alto, Montilla Moriles 

VARIETALS: 100% Pedro Ximénez

AGEING: Biological ageing under a film of yeast called “flor” (10+ years), followed by oxidative ageing (15+ years). Both processes take place in 600 L American oak casks using the “criaderas & solera” system. Total ageing is 25-30 years.
