"When Heather Sperling set out to open her newest restaurant, Bar Siesta, a Spanish tapas bar in the heart of Los Angeles’ Silverlake neighborhood, she was eager to launch the beverage program.
'I get to push my sherry agenda,' says Sperling, who also operates nearby seasonal California restaurant Botanica along with co-owner Emily Fiffer. 'I’ve been wanting to do that for a long time because I've seen how people react to it,' she says of the Spanish fortified wine now front and center on her drinks menu at Bar Siesta."

The solera & criaderas aging system is a dynamic method used in Andalusian winemaking in Jérez and Montilla-Moriles to ensure consistency and complexity over time. It consists of a series of stacked barrels, where the oldest wine (solera) is stored at the bottom and younger wines (criaderas) are placed in tiers above. Periodically, a portion of the oldest wine is drawn for bottling, and the emptied space is replenished with wine from the next younger tier, continuing up the system. This fractional blending process allows for a gradual integration of characteristics, ensuring that each bottle contains a mix of different vintages, creating a balanced and mature final product with amazing complexity and elegance.

The winery’s oldest solera dates from this year – and there are indeed still some bottles available! Under the direction of cellar master Rafael Córdoba, Pérez Barquero has built an International reputation as the top sherry-style wine producer in the appellation, earning numerous awards, including the only 100-Point rating from the Wine Advocate for a sherry. Their vineyards are located in the most valued high quality zones of the Sierra de Montilla and Moriles Alto, where the substratum is very rich in organic remains, allowing for optimal ripening of their grapes.
